Low Carb Keto Baked Cauliflower Mac n’ Cheese

Do you love comfort food? I am a sucker for warm and seriously fattening food in the winter. The cold weather just makes me want to curl up under the covers with all the carbs! Well not literally but you get the point.

Over the last three years I’ve been putting my health first and making an effort to eat better. So naturally I’ve been on the hunt for some healthier options. But… I now have a toddler who basically eats mac n cheese a lot and I only have so much will power. Enter adult mac n cheese! This cheese sauce is so yummy and you barely notice you’re eating cauliflower instead of pasta. Let me know if you like it! I would love some feedback.

Recipe

Two 12 oz packages of frozen cauliflower

8oz sharp cheddar shredded

1 cup unsweetened almond milk

1 cup heavy cream

1 tbsp butter

3 TBSP Almond flour

2 TBSP Minced onion

½ teaspoon of salt

¼ teaspoon pepper

Preheat oven to 400 degrees Heat butter in pan and cook onion. Add in flour and continue to cook onions. Meanwhile steam cauliflower in microwave in microwave safe bowl. Add milk and continue stirring until it starts to thicken, raising heat to medium. Add in salt and pepper. When thick remove from heat and stir in shredded cheese a little at a time. Stir in cauliflower to coat. Grease casserole dish and pour cauliflower and cheese sauce into dish. Bake for 15 minutes until bubbly.

This was made for my husband who is doing Keto. You could absolutely substitute the heavy cream and almond milk for regular milk and substitute the almond flour for regular flour. It wouldn’t be low carb anymore but still tasty!
