Low Carb Keto Cauliflower Chicken Fried Rice
Do you love chicken fried rice as much as I do? I mean, like get me a bucket of it! So when I started eating low carb I was seriously missing my fried rice addiction. And then I stumbled on a great recipe that had cauliflower rice. I know what you’re thinking… it doesn’t taste the same, cauliflower is gross, blah, blah, blah. Well guess what, nothing will ever taste like take out. But… when you find something similar, you make it at least once a week to curb your cravings for takeout. So here it is…
Cauliflower Chicken Fried Rice
Ingredients:
Rottiserie chicken (shredded)
1/2 small onion, diced
1 tsp garlic
2 bags of frozen cauliflower riced
1 tbsp seasame oil
1 tbsp olive oil or coconut oil
2 eggs
1 cup frozen peas and carrots
1/4 cup of Soy sauce or Braggs Liquid Aminos
1 stalk of green onion (optional)
Directions
Heat
electric skillet and add both tbsp of oil, garlic and onion and saute. Add both
bags of cauliflower, rice and peas and carrots, saute until they begin to
soften Push the rice to one side of the skillet. Mix the 2 eggs in a small
bowl, and scramble them on the empty side of the skillet. Mix everything
together once the eggs are done. Continue cooking. Add the shredded chicken and
cook until warmed through. Add soy sauce to taste. Add green onion if you want
and enjoy!
