Bean-Less Crockpot Chili Recipe

I am a huge fan of chili, especially in the winter. There is nothing else like something hot to eat when you’re freezing. But the beans in chili do not make my belly feel good. So I’ve been experimenting with different ways to incorporate more veggies in place of the beans. You could easily replace the meat in this recipe for sweet potatoes if you are vegetarian also!

Recipe

  • 1lb of turkey or ground beef
  • 28oz can of crushed tomatoes
  • 14.5 oz can of diced tomatoes
  • 8 oz can of tomato sauce (optional)
  • 1/2 of an onion diced
  • 1 tsp of minced garlic
  • 1/2 of a red and green bell pepper
  • 1/2 cup of celery
  • 1/2 cup of carrots
  • 1 packet of chili seasoning, or you can make your own

Instructions

  • Cook onions and garlic until soft, add in the meat and cook
  • Drain grease and add to crockpot
  • Add cans, veggies and spices to crockpot
  • Stir and cook on low for 6-8 hours or until you’re ready to eat! Sometimes mine cooks longer while I am at work
  • Spoon into bowls and top with your favorite fixings! I love avocado, sour cream, cheddar cheese and fritos
  • Enjoy!

On a side note, you will have extra celery, carrots and peppers. I usually slice those up and keep them in the fridge for snacks during the week. Hello meal prep! This also gives us leftovers for a few days for just my husband and I. Our four year old is not a huge chili fan yet, so if you have a larger family you can double the recipe.
