My Favorite Easy Weeknight Dinner

As a busy mom with a full time job and having my own business, getting dinner on the table can be downright impossible. But having easy meals like this one already prepared for dinner is a must! I meal prep on Sunday’s so we are prepared for the week. It not only saves us loads of money from dining out but it also helps your waistline! You can also make tacos or enchiladas with the leftover chicken, what could be better than that?!

Easy Crockpot Salsa Chicken

Ingredients:

3-4 Chicken breasts

1 Jar of Salsa (organic)

2 TBSP of Taco seasoning

Homemade Taco Seasoning Ingredients

4 TBSP Chili Powder

2 TBSP Cumin

1 TBSP Paprika

1 TBSP Salt

1 TSP Garlic Powder

1 TSP Onion Powder

1 TSP Oregano

1 TSP Black Pepper

Mix and store in a air tight container. 2 TBSP of this is equal to one store bought packet of seasoning.

Directions

Throw the chicken breasts in a crockpot with salsa and taco seasoning and boom! Dinner is ready when you get home.

Add steamed cauliflower rice, cheese and avocado or whatever your heart desires and your craving for chipotle will disappear.

Side note, the reason I make my own taco seasoning. Most store packets are filled with extra salt and preservatives you don’t need.
