Easy Whipped Cream Icing

I know this is not one of my healthy recipes I usually share with you but… Birthdays are a time to celebrate and eat cake. And I am not one of those people that easts healthy cake. So, when my sons Birthday rolled around in April and we were quarantined at home, I had the perfect excuse to bake! I was able to grab a funfetti cake mix off the shelves before that one went empty (seriously, I want to know what everyone did with the 10 boxes of cake batter they bought?) And I am not a fan of the icing in the can, it tastes like wax to me. Don’t ask how I know what wax tastes like…

So I grabbed some cream cheese and decided to make my own icing for my little guys cupcakes. I love whipped icing, or frosting whatever you choose to call it. It’s light enough that you can enjoy a second cupcake without feeling like you’re going to puke from all the sugar. Are you a fan? Or do you enjoy the butter cream?

Ingredients:

8 oz cream cheese

1 1/2 cups of powdered sugar

2 cups of heavy whipping cream, add an extra 1/2 cup if it’s too thick

Directions:

With a mixer combine the cream cheese and sugar. Slowly add in the heavy cream until you start tp get stiff peaks! (I don’t know why but that makes me giggle every time) Spread icing on your cupcakes and devour.
